Add the following ingredients into a bowl and mix together. Season with salt and pepper if needed.
250g pack of cooked lentils (e.g. Merchant Gourmet)
2 medium courgettes, made into ribbons using a potato peeler
2 handfuls of fresh mint
2 avocados, chopped
1 large handful sunflower seeds
Juice of 4 limes
4 tablespoons olive oil
Additions / variations
Add a handful of pomegranate seeds for extra colour and crunch
If you’d rather use a different variety of seed or nuts, you can do. Chopped walnuts or pumpkin seeds would work well.
